Curious about pie and the people who make them... January 10, 2008 J. Johnson (Tempe, AZ) Mr. Edge crossed the country in search of the perfect apple pie and how it connects to the people who bake them. He found many more bad pies than good. Fortunately, he shares with us the highlights of his journey. His stories affirm that great apple pie is as rich and varied as the (American) people who bake them. I started baking pies because, 1. fresh pie is so great, 2. nobody else would make them for me, and 3. commercial pies are too sweet and mushy. The Apple Pie book tells me that I am not alone as a snob of the not-so-fancy apple pie. Thank you Mr. Edge for finding all these pie bakers, for telling their stories, and for sharing their recipes.
